Jan's Sunday Eggs

Heat oven to 400º - Serves 8

Combine and mix well:

5 eggs

2 T melted butter

8oz Fat Free Cottage Cheese or Ricotta

2 Cups shredded Monterey Jack cheese

2 - 4oz cans of diced green chilies or the same amount of chopped Jalapeños (1 cup) - with or without seeds/ribs

1/4 C flour

1/2 t baking powder

Pour into well greased quiche pan (or a cake pie/pan)

Bake 10 minutes

Remove from oven and place 8 small tomato slices evenly around quiche

Return to oven and reduce temp to 350º

Bake 20 minutes longer.

Cut into wedges and serve.

Chinese Pot Roast - Roast Beef Sandwiches in the Crock Pot

Family Favorite For Roasty Beastie Sammiches

4 lb Pot Roast (rolled pot roast (rolled means string on, but doesn't have to have string)  - look for less fat, or trim) - Remove String.

Mix in a small bowl then rub over all sides of the roast
1/2 tsp Garlic Powder
2 tsp Dry Mustard
1 tsp White Pepper (black is fine if you don't have white)

Brown in Fry Pan
2 T Shortening (Crisco)
1 Large Onion
Brown meat on all sides.

Combine and Mix
11/2 C Water
1/2 C Low Sodium Soy Sauce
2 T Honey
2 T White Vinegar

Put meat in crock pot.
Pour combo over meat

Cook on Low 8 hrs. 10-12 hrs to fall apart.
You can toss this in the crock before work and have it after!

Buy some quality Bakery Hard Rolls (not hamburger buns or soft rolls, so the aus jus can be soaked up and they don't turn to mush!)

If you want Aus Jus, then just use as is.

If you want gravy - siphon most of the juice into a small sauce pan.
Add 4 T Cornstarch and 1/2 C Water mixed
Cook, stirring until boiling.
Pour on top of meat 1 hour before serving.


Mom's Goulash

One of the few casserole-type foods my dad liked.

Brown and Drain:
1 lb Ground Beef 
1 Onion Chopped
1/2 Chopped Green Pepper

Add:
2 Cans Tomato Soup (Campbell's low sodium)

Mix and let simmer.

Prepare 1 7 oz package of elbow noodles cooked 4-5minutes.
Drain noodles and rinse with hot water.
Add to meat mixture until cooked through.

Mom's Meat & Gravy aka Meat in the Oven

1 to 2 lbs of Top Round (trimmed)

Mix
1 Can Cream of Mushroom Soup
1 Package Onion Soup Mix
1/2 to 1 soup can of water (less if less meat)

Place meat in small roasting pan, cover and bake at 350º
Check after 1 hour.

1 lb = 1 hour
2 lbs = closer to 2 hours


Mildred's Meatloaf

2 lbs Ground Beef
3 Eggs, beaten
Salt and Pepper (to taste/if you like)
1/2 C Ketchup
1/2 C Chopped Onion - or you can use chopped dried onion 1.5 T
1/4 C Cream of Rice (cereal aisle) - go by feel, start wth the 1/4 cup and add more if needed.

Topping:

Mix 1/2 C Ketchup and 1/2 C Brown Sugar.
After 1st 1/2 hour, add half of the topping.
15 min later, add the rest.

Bake at 350 for 1 hour.



Mom's Oven Baked Pork Steaks or Chops

6 Pack Pork Chops or Lean Pork Steaks

Mix
1/2 C Orange Juice
1/2 tsp Salt
1/4 tsp Black Pepper
1/2 tsp prepared mustard (yellow)
1/3 C Brown Sugar
2 T Melted Butter

Place chops on shallow pan and pour OJ mixture over the meat.
Make sure the chops are covered in the mixture, and then the rest can flow onto the pan.

Bake uncovered about 1 hour - turning over once until meat is 145ºF. Baste occasionally.
Thin chops need less time so they don't dry out.

My Pesto

Makes 2 Cups - Can be frozen in ice cube trays.

3 Packed Cups of Fresh Basil (leaves and smaller stems - not the main stem)
2 Cloves Fresh Garlic
1/2 C Chopped Pine Nuts, Walnuts, Almonds (combined or just one. I use Pine Nuts)
3/4 C Chopped Packed Fresh Parsley
3/4 C Fresh Grated Parmesan
1/4-1/2 T Olive Oil
1/4 C Melted Butter

Combine everything in a blender or chopper  on low, then medium - arranging./stirring so it turns efficiently while chopping/spinning. Sometimes it's easier to get it semi-mixed, then remove half - mix half - swap out the other half and mix, then mix both halves together, depending on your blender/chopper.
Work until a smooth paste.

Toss with hot drained pasta, spoon over Gnocchi, or serve with breads, crackers or veggies.
SO YUM!

Susan's Hot Cheese Dip

1 lb Velveeta Cheese
2 cans Cheddar Cheese Soup
1 8oz jar Taco Sauce
1 4oz can Green Chilis 

Heat all ingredients slowly in small sauce pan, crock or fondue pot.

Serve with Taco Chips

This recipe can be halved.

1/2 tsp Dry Mustard

Add Beef Mix to Crock Pot
Simmer

Serve on Hamburger or Slider Buns

Peanut Butter Cookies

This is the recipe my mom and I've always made.

1 c white sugar
2/3 c brown sugar
1/2 c shortening
1/2 c peanut butter
3 eggs beaten
3 c flour
1 1/2 tsp soda
1tsp baking powder
1/2 tsp salt

Cream sugars, shortening and butter.
Add peanut butter and mix thoroughly.
Add beaten eggs.
Add flour, soda, powder and salt. Mix well.
Drop by rounded teaspoonfuls on sprayed cookie sheets.
Flatten in a crisscross pattern with a fork.
Bake at 375ºF for 10-12 minutes.
Makes 5-6 doz

Orange Quick Bread

My Mom cut this out of some publication - Author not listed.
Last time I visited my parents, my mom sent me home with a few slices of this bread/cake.
It really is like a cake - coffee cake. It's delish! I made this last night to mail to my son for his birthday on Tuesday. Hope he likes it as much as I did!

Glaze and Ganache Optional

Orange Quick Bread
2 c flour
3/4 tsp sea salt
1 T baking powder
1 1/2 c sugar
1/2 c milk
1/2 cup fresh orange juice
1/2 cup vegetable oil
3 extra large eggs
1 1/2 T grated orange zest

Ganache (optional)
1/3 c heavy cream
1/2 c bittersweet chocolate chips

Heat cream until small bubbles appear around edge. Remove from heat and add chocolate chips - shake pan to level chocolate. Set aside for 2 minutes. Stir until smooth and set aside.

Glaze (optional)
1 1/2 c powdered sugar
2 tsp orange zest - finely grated
2-3 T fresh orange juice, strained.

Mix ingredients in a small bowl. While bread is still warm poke several holes in it with a skewer and slowly pour on glaze.

Preheat oven to 350ºF and grease two 8-inch loaf pans.

Whisk together flour, salt baking powder and sugar in a large bowl.
In a small bowl, whisk together milk, juice, oil, eggs and zest.
Add to dry ingredients and mix until combined.
Divide batter equally into pans. Bake 35 min. until bread is shrinking away from pan.**
Cool bread completely before removing from pan.
Keeps wrapped in the refrigerator one week and freezes well for 2 months. (I kept mine on the counter).

**For ganache:
Bake 15 minutes, then open the oven, pull out rack without jogging too much, and quickly dribble about 1/4 cup ganache over batter in each pan. (If ganache has become too firm to dribble, set in a bowl of warm water for a few seconds to melt. Stir to smooth again.)
Gently slide rack back in and bake 20 minutes, until quickbread is shrinking away from pan.

Optional: serve with chocolate or vanilla ice cream.

Gramma's Split Pea Soup

2lb Smoked Ham Shank or Pork Hock - Look for dark for more flavour.
2 Bags Split Peas - rinsed and sorted
2 Bay Leaves
2 Tbsp dry Minced Onion - or a large onion, finely chopped.
1/4 tsp Black Pepper

Put all in soup pot - then fill 2/3 to 3/4 full with water.
High until start to boil, then down to medium heat.
Let cook 1.5 hrs
Remove scum.

Cook until meat falls off the bone - break it down, removing bones and add meat back to soup.

Add:
4 Carrots - large, cut up
2 C Potatoes - cubed

Cook until all cooked down - 2-3 hours total.

Enjoy!

Mom's Meatless Stuffing

Family fave!
Not soggy.
Cooked separately from the bird, not inside - way more delish!
Even cold as leftovers to snack on from the fridge!



Serves 6-8 People

8 c Bread cubes
1/4 c Water (if new bread)
1 1/2 c Thin Sliced Celery
1 c Chopped Onion
1/2 c Unsalted Butter (1 stick)
2 Eggs
3 T Parsley Flakes
1 1/2 t Poultry Seasoning
1/2 t salt
1/2 t pepper

Cube bread. Scramble eggs together in a bowl.

Saute/Brown onion and celery in butter. 

Mix with all other ingredients.
Add Eggs to the rest, stirring to be careful so eggs don't immediately cook.

Put in foil lined/cooking-sprayed casserole bowl. Cover and Bake 1 hour 325-350º





Double: 1 1/2 Sticks Butter and 3-4 Eggs (Double everything else)
Triple: 2 Sticks Butter and 4-5 Eggs (Triple everything else)

Turkey Vegetable Soup

Had cooked up a half turkey breast, and with the left over carcass decided to boil it down for some light, but healthy soup. You could use chicken too.

In a big stock pot with strainer inside:
1 turkey carcass - from whatever size turkey or breast you've cooked.
Water to cover the carcass, without overflowing the pot.
Cracked black pepper.

Let it cook on low for about 4-5hrs. (You can probably turn the heat higher and cook it faster, but I wanted to go out and run errands, and not have the broth boil away.)

Pull the strainer/carcass from the pot, removed any good meat and tossed it back into the pot along with:
1 large onion, quartered and cut in half - so kinda chunky/bite-sized
1 small head of bok choy chopped up
1 bunch of baby kale, stems removed (basically rip the small leaves off and toss them in)
2 large jalapenos (stems, seeds and ribs removed) chopped small
3 cloves garlic chopped small
3-4 small carrots - peeled and chopped bite-sized
3-4 ribs of celery sliced bite-sized 1 can of black beans, drained and rinsed
1 packet of Herb-Ox sodium-free chicken bouillon
You can add anything else such as: mushrooms, cabbage, tomatoes, other beans or whatever veggies you like or have on hand. You can also add noodles. Or even put some rice noodles in a bowl then pour the hot soup over. Add some fish sauce, ginger, bean sprouts, lime, chopped peanuts, lemon grass and make it sort of an impromtu PHO-type or Asian-style soup.

Let that cook on low/med til the carrots are tender, but not mushy - was maybe an hour. The broth will be pretty bland, as I don't add salt, so salt at will/to taste. Instead, I put some in my bowl and added a few shakes of my favourite health spice mix of turmeric, cayenne and ginger.
A nice, spicy, light, late-night meal on a rainy summer night. Plus the house smells amazing! Mmmmmuy Bueno!

Mujadara - of sorts...

Today while cooking up some staples for this week's meals, I decided to do a Google search for "Lentils and" and there were several recipes right off the top that sounded interested and included veggies I am trying to eat more of in new ways.

Anyway, the recipe for Mujadara (Lentils and Rice with Fried Onions) called for tons of Olive oil (6T) and was very plain (no spices), and another called for 1/2 cup and several spices I love. I figured I could do it with less oil and more spices.

*Note, the second recipe called for 1 t. cumin seeds, I had none, so I just used 1/2 t. ground cumin.

Since I was already cooking lentils, quinoa and black beans, I didn't really follow the recipe fully either. You can look here a them and decide for yourself which you like best and do it that way, or try it my way. It was my first time making this, and I think it turned out pretty tasty - but then again I've never had Mujadara before, so what do I know! *shrugs* I also figured this would be a recipe my mom might like cuz she loves lentils and she LOVES Fried Onions (not to mention plain yogurt).

In a large skillet on medium heat add:

2 T coconut oil (virgin expeller pressed)
1/2 t ground cumin
1/2 t ground black peppercorns (it's supposed to be 1/2 cracked black peppercorns - but I only had the grinder kind - winged it!)

(Let the oil get hot, then spoon the cumin in and swish it around the pan - then grind the pepper over it all and let heat - then stir/swish it around again to cover the pan.

While that heats for a minute or two slice thinly or in circles then add to pan:
1/2 large red onion
1/2 large sweet onion

(If it seems to be a little dry add about 1/4-1/2 cup water and stir all around and spread out onions to cook somewhat evenly.)

Once 'fried' then add and stir in well:
1/2 t. ground cayenne pepper
1/2 t. ground cumin
1 cinnamon stick
1/2 c water

(Here you can pull out some of the onions for garnish if you wish - since it was just me, I skipped that step - then later just threw on a few on top for the photo *wink*)

To this mixture add:
2 c cooked Quinoa (the recipes call for long grain or basmati rice, but since Quinoa is rice-like to me and healthier than rice - I booted the rice)
1.5 cup cooked lentils - in their water from cooking - I just scooped it over from the sauce pan without rinsing the lentils, so the mixture would have that added lentil broth (instead of adding more plain water).
You can also cook the lentils in a broth (I'd maybe use a packet of Herb-Ox Sodium Free Beef or Chicken Broth next time.)

Stir this all well and cover and reduce to low for about 5-10 min to absorb the spices.


Spoon Mujadara into a bowl, slop on a dollop of plain fat free yogurt, a squeeze of fresh lemon juice, then toss some onions on for garnish and enjoy!


You can also use sour cream (regular, or lite or fat free - your call) in place of yogurt.

I wasn't going to use anything, but I have a full container of yogurt I need to use, so on it went. I used one heaping teaspoon, as I have plans for the rest of the yogurt - some very healthy dessert treats!

Note: I did not add any sodium to the water for the cooking of the Quinoa or the Lentils, so the only sodium in this recipe came from the yogurt. The yogurt, Land O'Lakes Plain Fat Free is 120 calories, 150 mg sodium per 8oz serving. I used one heaping teaspoon - so it was pretty minimal overall.

I also think that next time, I'd add some more veggies: red pepper, broccoli, quartered grape tomatoes, maybe even some chopped kale or spinach, and maybe even some shredded cooked lean chicken for a variation. Or maybe even some sliced apple!

In the comments for recipe 2, the spicier one, some people thought that there was too much heat from the 1/2 t cayenne. I like food hot, and really didn't notice any 'heat', so I'd probably up the cayenne some too.

Overall this was pretty tasty. So tasty I had another bowl without the yogurt and lemon this time and you could really taste the cinnamon. Mmm.

I Cannot Tell A Lie! I ❤ Chocolate Cherry Bars!

Two friends have February birthdays this week; today and Saturday (I know of many others this month too!), plus tomorrow is Valentine's Day, and Monday is the President's Day holiday! What more reason in February to celebrate with chocolate and cherry (ala George Washington) could there be? It doesn't get much better than this!

Recipe makes 32 Bars  (cut in rows of 4 x 8 - they are very rich, so you can cut them smaller if you like)- only 18 shown here as I was bringing them to a birthday lunch. The remainder I took to work. I also cut them then iced them so the icing would drip over the edges of the zig-zag ones for aesthetics.
They are very rich due to all the chocolate, almond and cherry. You could probably add some chopped almonds too, but I had none on hand.

Bars:
1 cup butter (I used unsalted)
1 cup sugar
2 eggs
1 teaspoon almond extract
2 cups flour
1/4 cup baking cocoa (if you omit this - the bars will be more like chocolate chip pan cookies)
1 teaspoon soda
1/2 teaspoon salt

1 10oz jar Marashino* Cherries ( drain cherries reserving liquid) and chop into small pieces.
1 12oz bag semi-sweet chocolate chips (divided)
1/2 cup chopped slivered almonds (optional) Or maybe sprinkle the icing with some sliced?


Icing:
3 to 4 Tablespoons cherry juice (or more to make a thin decorating consistency)
1 cup powdered sugar
2 tablespoons butter softened (again, I used unsalted)

Pre-heat oven to 325º Grease 13x9 pan on bottom and all sides.
Drain Cherries (saving the juice for the icing) and chop into small pieces.

Cream butter, add sugar. Mix in eggs and almond extract. Add cocoa powder, flour, soda and salt - mix well. Stir in cherry pieces and 1 cup of chocolate chips.

Bake 30-35 minutes. Remove from oven and sprinkle the rest of the chocolate chips on top to melt - Takes about 5 minutes - I covered the pan to keep in the heat and melt them faster. Spread evenly and let cool completely.

Mix the softened butter, powdered sugar and cherry juice til very smooth and thin enough to drizzle. I used several tablespoons of juice to achieve that consistency. You can just spoon across the bars, or you can load the icing into a cake decorator's tube, or even just a plastic bag with a corner cut out to draw more precisely any design or lettering.

If you like, you can also cut the bars first (8 rows by 4 rows), place them on a tray or dish, and that way the icing dribbles over the side. Be as creative as you like. Since they are for a Valentine's Day birthday lunch, I made hearts and some zig-zags for fun! Let icing set and enjoy!

So super chocolatey, cherry, and almond-y flavoured! ❤

Next time I will cut these into smaller bars as they are very rich; perhaps one by one, or one and a half inch squares, similar in size to a piece of fudge.

They would also be tasty with Raspberry or Orange, or even real Cherry! Mmmm

*I hesitated in buying the Maraschino Cherries as every brand the 'upscale grocery' carried listed high fructose corn syrup on the label, except one - 'Salad Cherries', and I wasn't sure they'd be the right type/flavour as they looked a bit darker. Figuring that only a small amount of the juice is used overall, I just used the cheapest store brand ($1.49 vs $2.00+), as every single ingredient in the other brands were exactly the same.

Green Curry Chicken and Vegetables

You can make this in about 30-40 minutes or less depending on if you have pre-cooked/leftover chicken and what vegetables you use/have on hand. If you have leftover chicken you'd just need to cut/shred it up, make up the sauce and toss it in, add veggies and done! Simple.

You can also make it two different ways:
1. Right in the same skillet
2. In two pans, as I have shown below

One of the recipes I saw online said to mix the sauce and then cook the chicken in the sauce, but I wanted the meat to have that bit of a glaze to it, to utilize the drippings for the broth, and then cut/shred it to cook with the sauce and veggies.

Do whatever you wish/is more appealing to you.
You may also want to cook up some Jasmine or Basmati rice, Thai noodles or Quinoa; I decided to have mine as is in a bowl.

1/2 to 1lb Chicken Breast (or whatever chicken meat you like)
1 to 2 T Coconut Oil (depending on how much chicken you use)

Lightly brown chicken in a skillet in coconut oil on medium heat.
I brown my chicken breasts, then butterfly them and brown the insides a little too, then cut/shred the halves into the desired size pieces. If you're using the drippings for the sauce, you can add that in later too. Whatever works for you.

(Mix sauce below while chicken is browning)



Next, mix all the sauce ingredients in the skillet or sauce pan:

1 can Coconut milk *see below*
1/3 to 1/2 cup Chicken Stock (you can use the drippings from the pan to make this by adding water to make 1/2 cup, or you can use 1/2 packet of Herb-ox sodium free chicken broth. (1 packet = 1cup, so half is plenty)
1/4 cup Shredded/Chopped fresh Basi
2 T Fish Sauce
2 to 3 T Green Curry Paste

Bring to a boil then reduce heat and simmer for 15 min (this can be done as the chicken is browning - or as mentioned above, you can make the sauce in the skillet and then add the cut-up chicken to cook in the sauce = your call.)



1 1/2 to 2 1/2 cup cut Veggies (I had a bit more, but there was plenty of sauce)

Cut up your veggies of choice (I wished I had some broccoli, but was quite happy with portobello mushrooms, carrots, green beans, pea pods, and red pepper.)

Once chicken is ready, I kind of just cut/shredded it apart into bite-sized chunks and poured the sauce into the pan. Let it cook for about 5-10 minutes to get into the chicken meat.

Toss in your veggies, cover and let them cook for about 5-10 min depending on how you like them. I prefer them more al dente, so less for me. Love me some crunchy green beans in curry sauce!

Fill a bowl or spoon over rice!
Enjoy!

Here are the examples of coconut milk I had on hand. The Golden Star was around $1.50 at Wally world and the Kame was from SuperOne @ over $2 a can. I chose these over the 'Lite' or other brands as they had the least sodium and the ingredients were only Coconut Milk and Water (Golden Star 54mg sodium) and Coconut Milk, Water and Guar Gum (Kame 15mg sodium). Funny how Golden Star's was more 'pure', yet contained more sodium than the Kame. Golden Star also was higher in Calories and Fat. You really need to read your labels!

They both contained less sodium, and the least ingredients than all the other brands I could see at the stores where I shop (We have no Trader Joes!!! *Cries*). You find the best one for you. The Lite coconut milk (I thought was lite anyway) I used to use, had all kinds of other ingredients and was higher in sodium as well. I won't be buying that ever again. Much rather have less ingredients, and less sodium per serving. Now, I don't salt my food, or recipes unless it's called for, and often times use less, as sodium is often found in another ingredient, as in this coconut milk and the curry paste, or naturally occurring in the vegetables. I like to taste my food, not be overwhelmed with salt.

Hot Italian Turkey Sausage

***I recently made my own Italian Turkey meat - using 16oz/1lb rolls of plain turkey meat (Super One Plaza had it - a weird brand - it was like 2/$3 and had no extra additives (unlike the turkey store, and other brands do - I was pleasantly surprised and happy it was just ground turkey without all the crap). I ended up making 5lbs at once and froze the rest - using about 1.5lbs in that lasagna I was tellin you about, and some of the larger browned chunks I saved for making a pizza as 'sausage' - was super flavourful, but not sausage - so healthier and delish! Would be great for spaghetti or any other Italian dish you want meat in.

I used a combo of spices found in a couple of online recipes for making turkey sausage - OMG - so good. The recipes were for like 20lbs of meat, so I just reduced it down some for 3lbs.

For 3 lbs ground turkey (or chicken) If you only wanna make 1lb just divide up the recipe.
Mix all in a bowl:
1/2 to 1.5 tsp sea salt
1 tsp garlic powder
1 tsp finely minced garlic
1 tsp onion powder and/or finely minced onion
1 tsp ground black pepper
1 tsp ground white pepper
2 tsp paprika
*1.5 tsp cayenne pepper
1.5 tsp poultry seasoning
1.5 tsp italian seasoning
2 T basil**
2 tsp mexican oregano**
1.5 tsp summer savory
1 tsp anise seed (I used a little over 1 tsp cuz I love anise)
1.5 tsp ground fennel seed
1 tsp fennel seed (I used a little over 1 tsp cuz I love fennel)
*1 tsp red pepper flakes (grind up with mortar/pestle or whatever you have - I didn't bother)

1.5 Tablespoons Olive Oil.

*If you don't like it hot - don't add cayenne or red pepper flakes (this was mild to me - I'd use more next time or when I thaw my package and cook it, as I like HOT Italian sausage)

**You can use Italian seasoning too - just omit the basil/oregano

Mix all dry ingredients in a bowl, then add in olive oil, and mix well.
Mix that with the ground turkey  - really mixing well. I did this by hand in a large mixing bowl - divided the wet mixture like in half with half the meat at a time. Then mixed it all together - if you have a heavy duty mixer or something(food processor?) maybe use that. I didn't so I did it by hand.

Cover the bowl and let the mixture sit for a full 24 hours in the fridge so the flavours blend with the meat.

Divide into 3 -1lb packages - freeze.
When I browned the meat, I left it more chunkier like sausage would be - not broken way down as ground poultry tends to do.
I set aside a few dozen chunks for pizzas - so yum!
And way healthier too - not greasy/fatty like sausage is, but had all the Italian flavour.

Quick and Easy Healthy Stir Fry

One of my favourite treats on a rare occasion when I'd visit the mall, was to stop at the Asian restaurant in the food court and order some chicken and broccoli. It was delish. I loved the sauce, and it was cheap, maybe $3-4.00 when you ordered it ala carte. The thing I didn't like was that as good as the sauce was, the sodium was probably off the charts, so I'd pick all the chicken and broccoli out, or even ask them to use a slotted spoon and not give me any sauce, as it was only it's flavour that enhanced the food I craved.

Once when searching for a recipe for jumbo shrimp, I found a simple one for Jumbo Shrimp and Asparagus! I was in luck! At a recent visit from Fabian Seafood, I had purchased a pound of jumbo shrimp and had some asparagus on hand as well! Mmm. I figured the recipe looked quick and easy enough, so why not.

Turns out, the sauce in the recipe was the exact flavour I'd been craving, and the dish was delish!

Subsequently, in a quest to make it a little healthier, I've modified the recipe and also used various protein ingredients (shrimp, poultry, beef, and pork) as well as played with the veggies, depending on what I had on hand.

Obviously, if you buy meats in bulk and then prepare and freeze them ahead for meals (meaning the meat is already cut into bite sized chunks), then your prep time will be way faster.


2 cups chunked Chicken, Pork or Beef, or 24 Jumbo Shrimp peeled and de-veined.

3-4 cups of veggies of choice cut into approx 1in pieces (asparagus, broccoli, mushrooms, pea pods, onion, red/green pepper, celery, etc - whatever you like or have on hand. I like a LOT of veggies, so I use closer to 4 cups or more.

1-2 Tablespoon of your oil of choice - I use a non-stick pan so I only used 1T of EVOO (extra virgin olive oil). One time with shrimp I used coconut oil, but it was too coconutty for my tastes when making a stir fry - would probably be better for a curry. ;-)

2 teaspoons chopped fresh ginger root  - I make ginger tea nearly daily and just used the leftover ginger pieces for the stir-fry. It's already cooked, so easy~peasy, just chopped the pieces smaller. It's also less fibrous when you eat it, but still as flavourful.

3 teaspoons low-sodium soy sauce (original recipe calls for 3T, but I don't care for that much soy sauce or all it's sodium).

4 T water (I didn't pre-boil the asparagus/veggies, nor did I use all the soy, so I made up for the difference with water)

1 packet Stevia: 1/2 packet = 1 teaspoon sugar, and the recipe calls for 2 teaspoons. ;-)

1 teaspoon dry sherry (I had none, so I used dry white or red wine, depending what I had and what sort of protein it was). I usually have a dry red on hand ;-)

1-2 teaspoons chopped/minced garlic, onion, and/or garlic, onion and ginger powder, or any/all you like. I used them all - Love lots of flavour and they're all good for you. Notice I used the powder, not the salt.

Heat the oil in a wok or large skillet, then brown the meat or saute the shrimp, along with the chopped onion, garlic and powders til cooked through.

While meat is browning, mix together the chopped ginger, soy sauce, water, stevia, and sherry/wine.

Add the veggies to the meat, then pour in the sauce.  Cover for 5 min so the broccoli or asparagus and other veggies steam (I like mine more al dente than soft). You'll know when they're done as they'll turn brighter green! This doesn't over cook them and provides lots of good vitamins and minerals too!

Makes about 4 servings.

Last week I made Shrimp and Broccoli.
Fabian had just come again and I had some broccoli ready in the garden. Mmmm.


You can make some rice or other side dishes as well.

Note: If you want to thicken the sauce, mix 1T cornstarch with 1T cold water, and then add in after the sauce - stir to mix and then cover til veggies are done to your liking.
