My Cranberry Horseradish Mayo™

There is a restaurant here in town that makes this sort of mayo and this is my *what I'd call perfect* attempt to recreate it's awesomeness. I searched online for a recipe that seemed like it would have the same ingredients, and those others used whole cranberry jelly as well as many other ingredients such as vinegar, honey, salt and more. Those recipes that included photos showed a more reddish sauce/spread as they used more cranberry over this creamy pink one as the restaurant's is as well. This recipe is also more sweet than tart, and the horseradish is subtle, very subtle. If you wish it to be more hot, then use regular horseradish or more than the amount below. You could make your own mayonnaise, cranberry and creamy horseradish as well if you so inclined. If you'd prefer, you can use whole cranberry sauce too.

Cranberry Horseradish Mayo™

1T Hellman's Mayo

1 1/2t Canned Cranberry Jelly (any brand)

1/2t Creamy Horseradish (I used Kraft)

Mix all ingredients in a small bowl til creamy.

Double or more if needed.

*Edit*
Recently I made this only using the Creamy Horseradish (about 1T ) & Cranberry (about a 1/2 inch slice of the can) - just mashed together with a fork 'til well mixed - eliminating the Mayo, and it was even better!
More of the cranberry and horseradish flavour coming through without the mayo to mask it.

Give both ways a try!
