Heat oven to 400º - Serves 8
Combine and mix well:
5 eggs
2 T melted butter
8oz Fat Free Cottage Cheese or Ricotta
2 Cups shredded Monterey Jack cheese
2 - 4oz cans of diced green chilies or the same amount of chopped Jalapeños (1 cup) - with or without seeds/ribs
1/4 C flour
1/2 t baking powder
Pour into well greased quiche pan (or a cake pie/pan)
Bake 10 minutes
Remove from oven and place 8 small tomato slices evenly around quiche
Return to oven and reduce temp to 350º
Bake 20 minutes longer.
Cut into wedges and serve.
